- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is translucent.

- Place a spoonful of the beef and potato filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
