  2. In a separate bowl, whisk together the warmed milk, eggs, and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. While the dough is rising, prepare the vanilla custard filling. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat.
  5. In a separate bowl, whisk the egg yolks. Once the milk mixture is hot but not boiling, slowly pour a small amount into the egg yolks while whisking to temper them. Then, pour the egg yolk mixture back into the saucepan.
  6. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a gentle boil. Remove from heat and stir in the vanilla extract and butter. Transfer to a bowl, cover with plastic wrap (pressing it directly onto the surface), and refrigerate until cool.
  7. Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick. Cut out circles using a donut cutter or two round cookie cutters (one larger and one smaller).
  8. Place the cut donuts on a parchment-lined baking sheet, cover, and let them rise for another 30 minutes.
  9. In a deep pot or fryer, heat vegetable oil to 350°F. Fry the donuts in batches for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
  10. Once the donuts are cool, fill a piping bag fitted with a round tip with the chilled custard. Poke a hole in the side of each donut and fill with custard.
  11. Dust the filled donuts with powdered sugar before serving.

Notes

  • For a lighter version, you can bake the donuts instead of frying them. Preheat the oven to 375°F and bake for 10-12 minutes.
  • For a chocolate custard filling, substitute half of the milk with chocolate milk and add 2 tablespoons of cocoa powder to the mixture.
