Soft Cream-Filled Donuts with Vanilla Custard Filling are irresistible!
Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 cup whole milk, warmed to 110°F
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- Vegetable oil, for frying
- For the vanilla custard filling:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 2 tablespoons unsalted butter
- Powdered sugar, for dusting
Instructions
- In a large bowl, combine the flour, granulated sugar, yeast, salt, and nutmeg. Mix well.
- In a separate bowl, whisk together the warmed milk, eggs, and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the vanilla custard filling. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat.
- In a separate bowl, whisk the egg yolks. Once the milk mixture is hot but not boiling, slowly pour a small amount into the egg yolks while whisking to temper them. Then, pour the egg yolk mixture back into the saucepan.
- Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a gentle boil. Remove from heat and stir in the vanilla extract and butter. Transfer to a bowl, cover with plastic wrap (pressing it directly onto the surface), and refrigerate until cool.
- Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick. Cut out circles using a donut cutter or two round cookie cutters (one larger and one smaller).
- Place the cut donuts on a parchment-lined baking sheet, cover, and let them rise for another 30 minutes.
- In a deep pot or fryer, heat vegetable oil to 350°F. Fry the donuts in batches for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
- Once the donuts are cool, fill a piping bag fitted with a round tip with the chilled custard. Poke a hole in the side of each donut and fill with custard.
- Dust the filled donuts with powdered sugar before serving.
Notes
- For a lighter version, you can bake the donuts instead of frying them. Preheat the oven to 375°F and bake for 10-12 minutes.
- For a chocolate custard filling, substitute half of the milk with chocolate milk and add 2 tablespoons of cocoa powder to the mixture.
