Ingredients
- 1 can 28 oz crushed tomatoes
- 4 cups vegetable or chicken broth
- 1 onion chopped
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup heavy cream
- 1 package 9 oz cheese tortellini
- ½ cup fresh basil chopped
Instructions
- Combine Ingredients: Add tomatoes, broth, onion, garlic, Italian seasoning, salt, and pepper to slow cooker.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Blend: Purée the soup with an immersion blender until smooth.
- Add Cream and Tortellini: Stir in heavy cream and tortellini, cook on high for 20-30 minutes.
