  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup unsalted butter (2 sticks)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 4 large egg yolks
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and black pepper on all sides.
  3. In a large, oven-safe pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs and set them aside.
  4. In the same pot, reduce the heat to medium and add the diced onion. Sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for about 5 minutes.
  6. Add the beef broth, thyme, and rosemary to the pot. Return the short ribs to the pot, ensuring they are mostly submerged in the liquid.
  7. Cut the butter into chunks and add it to the pot. Cover with a lid and transfer to the preheated oven.
  8. Braise the short ribs for 3 hours, or until they are fork-tender.
  9. Once cooked, remove the pot from the oven and let it cool slightly. Carefully remove the short ribs and set them aside. Strain the braising liquid and return it to the pot, simmering it on the stove until it thickens slightly.
  10. To serve, place a short rib on each plate, drizzle with the reduced braising liquid, and top with a raw egg yolk. Garnish with chopped parsley.

Notes

  • For a richer flavor, add a tablespoon of tomato paste to the onion and garlic while sautéing.
  • If you prefer a different garnish, try topping the short ribs with a dollop of horseradish cream or a sprinkle of grated Parmesan cheese.
