Baked Cheesy Cuban Chicken Taquitos: A Must-Try Delight!

How to Make Baked Cheesy Cuban Chicken Taquitos
Now that you’re all set with the ingredients, let’s dive into the fun part—making these scrumptious Baked Cheesy Cuban Chicken Taquitos! I promise, it’s easier than you might think, and the end result is a plateful of cheesy, crispy goodness that your family will adore. So, roll up your sleeves, and let’s get started!
Step 1 – Prep Ingredients
First things first, let’s get our ingredients ready. If you’ve got leftover chicken from last night’s dinner, you’re already ahead of the game! Just shred it up and toss it in a large mixing bowl. If you’re starting from scratch, you can quickly poach or bake some chicken breasts. Just remember, the more tender the chicken, the better the taquitos will be!
Next, grab your cheese. I love using a mix of cheddar and Monterey Jack for that perfect melty texture. Shred it yourself if you can; it melts better than pre-shredded cheese. Then, rinse and drain your black beans and corn. These little guys add a nice texture and flavor to the filling. Finally, chop up your red onion and cilantro. The fresh cilantro adds a burst of flavor that really makes these taquitos sing!
Pro tip: If you’re short on time, you can buy pre-cooked shredded chicken or even a rotisserie chicken from the store. It’s a lifesaver on those busy weeknights!
Step 2 – Begin Cooking
Now that everything is prepped, it’s time to get cooking! Preheat your oven to 400°F (200°C). This is the perfect temperature for getting those taquitos nice and crispy without burning them.
In your mixing bowl, combine the shredded chicken, cheese, black beans, corn, diced red onion, chopped cilantro, cumin, garlic powder, salt, and pepper. Give it a good stir until everything is well mixed. The aroma of the spices will start to fill your kitchen, and trust me, it’s heavenly!
Step 3 – Combine Ingredients
Next, let’s warm up those tortillas. Pop them in the microwave for about 30 seconds. This makes them pliable and easier to roll without tearing. No one wants a sad, broken taquito!
Now, take a tortilla and place a generous amount of the chicken mixture in the center. Don’t be shy—this is where the flavor lives! Roll the tortilla tightly around the filling, tucking in the sides as you go. Place the rolled taquito seam-side down on a baking sheet lined with parchment paper. Repeat this process until all your filling is used up. You should have about 10 delicious taquitos ready to go!
Step 4 – Finish and Serve
Once all your taquitos are on the baking sheet, it’s time to give them a little love. Brush the tops with cooking spray or olive oil. This will help them get that beautiful golden-brown color and crispy texture we all crave.
Pop them in the oven and bake for 15-20 minutes. Keep an eye on them; you want them to be crispy but not burnt. When they’re done, they should be golden brown and smell absolutely divine!
Serve these warm with your favorite dipping sauces. I love pairing them with salsa, guacamole, or a dollop of sour cream. Your family will be begging for seconds, and you’ll be the hero of the dinner table!
And there you have it—your very own Baked Cheesy Cuban Chicken Taquitos! Easy, delicious, and perfect for any occasion. Whether it’s a busy weeknight or a fun family gathering, these taquitos are sure to impress.

Ingredients You’ll Need
Before we dive into the cooking process, let’s gather our ingredients for these mouthwatering Baked Cheesy Cuban Chicken Taquitos. Trust me, having everything ready to go makes the cooking experience so much smoother and more enjoyable. Here’s what you’ll need:
- 2 cups cooked shredded chicken: This is the star of the show! You can use leftover chicken from a previous meal, poach some fresh chicken breasts, or even grab a rotisserie chicken from the store. It’s all about saving time while still delivering that delicious flavor.
- 1 cup shredded cheese (cheddar or Monterey Jack): Cheese is what makes these taquitos ooey-gooey and irresistible. I love a mix of cheddar for its sharpness and Monterey Jack for its creaminess. If you’re feeling adventurous, try pepper jack for a spicy kick!
- 1/2 cup black beans, rinsed and drained: These little gems add protein and fiber, making your taquitos more filling. Plus, they bring a lovely texture to the mix. If black beans aren’t your thing, feel free to swap them out for pinto beans or even refried beans.
- 1/2 cup corn: Sweet corn adds a pop of color and sweetness that balances the savory flavors. You can use canned corn, frozen corn, or even fresh corn if it’s in season. It’s all good!
- 1/4 cup diced red onion: Red onion gives a nice crunch and a bit of zing. If you prefer a milder flavor, you can use green onions or even skip the onion altogether.
- 1/4 cup chopped cilantro: Fresh cilantro adds a burst of freshness that brightens up the filling. If you’re not a fan of cilantro, parsley works just as well, or you can leave it out entirely.
- 1 teaspoon cumin: This spice brings a warm, earthy flavor that’s essential in Cuban cuisine. If you want to mix things up, try adding smoked paprika for a different twist.
- 1 teaspoon garlic powder: Garlic powder is a quick way to infuse that delicious garlic flavor without the fuss of chopping fresh garlic. If you have fresh garlic on hand, feel free to use a clove or two instead!
- 1/2 teaspoon salt: A little salt enhances all the flavors in your filling. Adjust to taste, especially if you’re using canned beans or cheese, which can be salty.
- 1/4 teaspoon black pepper: Just a pinch of black pepper adds a subtle kick. If you like it spicy, consider adding a dash of cayenne pepper or chili powder.
- 10 small flour tortillas: These are the cozy wraps that hold all the goodness together. You can use corn tortillas if you prefer a gluten-free option, but keep in mind they may be a bit more fragile.
- Cooking spray or olive oil for brushing: A light brush of oil helps the taquitos crisp up beautifully in the oven. You can use any cooking oil you prefer, like avocado oil or even melted butter for a richer flavor.
And there you have it! Each ingredient plays a vital role in creating the perfect Baked Cheesy Cuban Chicken Taquitos. Feel free to get creative and customize the filling to suit your family’s tastes. Want to add some diced bell peppers or swap out the cheese for a dairy-free option? Go for it!

Tips for Perfect Results
Now that you’ve got the basics down, let’s talk about how to elevate your Baked Cheesy Cuban Chicken Taquitos to the next level! With just a few simple tweaks, you can enhance the flavor, save time, and ensure that your taquitos are always a hit. Here are my top tips for perfect results every time!
1. Enhance the Flavor
While the original recipe is already bursting with flavor, there’s always room for a little extra pizzazz! Here are some ideas:
- Add Fresh Herbs: Fresh herbs can make a world of difference. Consider adding a handful of chopped green onions or a sprinkle of fresh oregano to the filling. They’ll add a fresh, vibrant taste that complements the other ingredients beautifully.
- Spice It Up: If you like a little heat, don’t be shy! Toss in some diced jalapeños or a pinch of cayenne pepper to the filling. You can also experiment with different spices like smoked paprika or chili powder for a smoky kick.
- Cheese Variations: While cheddar and Monterey Jack are fantastic, why not mix it up? Try adding some crumbled feta or pepper jack cheese for a different flavor profile. The more cheese, the merrier, right?
2. Speed Up Prep Time
We all know that time is of the essence, especially on busy weeknights. Here are some handy tips to speed up your prep:
- Use Pre-Cooked Chicken: If you’re in a real hurry, grab a rotisserie chicken from the store. It’s already cooked and shredded, saving you precious time. Just make sure to remove the skin and bones before mixing it into your filling.
- Prep Ahead: If you know you’ll be busy during the week, consider prepping the filling ahead of time. You can mix everything together and store it in the fridge for up to two days. When you’re ready to cook, just warm the tortillas and roll them up!
- Microwave the Tortillas: Warming the tortillas in the microwave for 30 seconds makes them pliable and easy to roll. This little trick can save you from the frustration of tearing tortillas!
3. Easy Storage Tips
Let’s face it, sometimes we make more taquitos than we can eat in one sitting. No worries! Here’s how to store leftovers or freeze them for later:
- Storing Leftovers: If you have any leftover taquitos, let them cool completely before placing them in an airtight container. They’ll keep in the fridge for about 3-4 days. When you’re ready to enjoy them again, just pop them in the oven at 350°F (175°C) for about 10-15 minutes to reheat and crisp them up.
- Freezing for Later: To freeze, assemble the taquitos but don’t bake them. Place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container. They’ll keep well for up to 3 months. When you’re ready to bake, just pop them straight from the freezer into the oven—no need to thaw!
- Reheating Tips: For the best results, reheat your taquitos in the oven rather than the microwave. This will help maintain their crispy texture. If you must use the microwave, try placing a paper towel underneath to absorb excess moisture.
With these tips in your back pocket, you’ll be well on your way to making the most delicious Baked Cheesy Cuban Chicken Taquitos that your family will love. Happy cooking!
Essential Equipment Needed
Before we get cooking, let’s make sure you have all the right tools on hand to whip up these delightful Baked Cheesy Cuban Chicken Taquitos. Having the right equipment can make the process smoother and more enjoyable. Here’s what you’ll need:
- Baking Sheet: A sturdy baking sheet is essential for getting those taquitos crispy and golden brown. If you don’t have a baking sheet, a large oven-safe dish will work just fine. Just make sure it’s big enough to hold all your taquitos without crowding them!
- Parchment Paper: Lining your baking sheet with parchment paper not only makes cleanup a breeze but also prevents the taquitos from sticking. If you’re out of parchment paper, you can lightly grease the baking sheet with cooking spray or olive oil. Just be sure to keep an eye on them to avoid sticking!
- Mixing Bowl: A large mixing bowl is perfect for combining all your filling ingredients. If you don’t have a mixing bowl, any large bowl will do—just make sure it’s big enough to hold everything without spilling over. A pot or even a clean salad bowl can work in a pinch!
- Microwave-Safe Plate: You’ll need a microwave-safe plate to warm your tortillas, making them pliable for rolling. If you don’t have a microwave-safe plate, you can use a microwave-safe bowl or even a paper towel to wrap the tortillas while heating them.
With these essential tools at your fingertips, you’ll be all set to create your Baked Cheesy Cuban Chicken Taquitos. Remember, cooking should be fun and stress-free, so don’t hesitate to get creative with what you have in your kitchen!

You can easily tweak the flavors and ingredients to suit your family’s preferences or dietary needs. Here are some delicious ideas to get your creative juices flowing!

You can adjust the amount based on your spice tolerance—more for the brave, less for the faint of heart! If you want to take it a step further, try using pickled jalapeños for a tangy twist.
2. Cheese, Please!
While cheddar and Monterey Jack are fantastic, don’t be afraid to experiment with different types of cheese! Here are a few options:
- Pepper Jack: For those who love a spicy kick, pepper jack cheese adds both heat and creaminess.
- Queso Fresco: This crumbly cheese adds a fresh, mild flavor that pairs beautifully with the other ingredients.
- Feta Cheese: Crumbled feta can bring a Mediterranean flair to your taquitos, adding a tangy and salty element.
Mix and match to find your favorite combination! The more cheese, the merrier, right?
3. Vegetarian Options
For those who prefer a meatless meal, you can easily make these taquitos vegetarian-friendly. Simply replace the shredded chicken with a mix of black beans, corn, and sautéed vegetables like bell peppers, zucchini, or mushrooms. You can also add some cooked quinoa for extra protein and texture. This way, you’ll still get that satisfying filling without the meat!
4. Dietary Adjustments
If you’re following a specific diet, don’t worry! These taquitos can be easily adapted:
- Keto-Friendly: To make these taquitos keto-friendly, swap out the flour tortillas for low-carb alternatives, such as cheese wraps or lettuce leaves. You can also increase the cheese content and add more healthy fats like avocado to keep it satisfying.
- Gluten-Free: For a gluten-free option, simply use corn tortillas instead of flour. They’ll hold up well and still deliver that delicious flavor. Just be sure to warm them up properly to prevent tearing!
