Instructions
- In a large bowl, combine the flour, salt, and granulated sugar. Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a 5-inch round cutter or a bowl.
- Place the dough circles on the prepared baking sheet. Spoon about 2 tablespoons of yuzu curd in the center of each circle, leaving a 1-inch border. Top with a few blueberries.
- Fold the edges of the dough over the filling, pleating as you go to create a rustic edge.
- Brush the edges with beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes, or until the crust is golden brown and the blueberries are bubbly.
- Allow to cool for a few minutes before serving.
Notes
- For a richer flavor, try adding a teaspoon of vanilla extract to the yuzu curd before filling the galettes.
- You can also substitute the blueberries with raspberries or blackberries for a different twist.
