Enjoy the classic taste of Grandma’s Carrot Salad, a refreshing and simple side dish that combines freshly grated carrots, sweet raisins, and a creamy, tangy dressing. This timeless salad is the perfect addition to any meal, offering a delightful balance of sweetness and crunch. Made with minimal ingredients, it’s easy to prepare and brings a touch of nostalgia to your table, just like Grandma used to make.

Prepare the Carrots and Raisins:

  • Grate the carrots using a box grater or food processor until you have about 4 cups.
  • Optional If you prefer softer raisins, soak them in warm water for 10 minutes, then drain and add them to the salad later.

Mix the Salad Base:

  • In a large mixing bowl (combine the grated carrots, raisins, and crushed pineapple if you’re using it.)

Prepare the Dressing:

  • In a separate small bowl (whisk together the mayonnaise, sugar (if using), and apple cider vinegar. Season with a pinch of salt and black pepper.)

Assemble the Salad:

  • Pour the dressing over the carrot mixture and toss until everything is evenly coated.
  • Taste and adjust seasoning as needed.

Chill and Serve:

  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.
  • Before serving (sprinkle with chopped walnuts or pecans, and garnish with fresh parsley or cilantro if desired.)
  1. Prepare Carrots: Grate carrots and place in a bowl.
  2. Add Raisins and Pineapple: Mix in raisins and crushed pineapple.
  3. Make Dressing: Combine mayonnaise and honey or sugar.
  4. Combine: Toss dressing with carrot mixture until coated. Chill for 30 minutes.
  5. Serve: Garnish with parsley and extra raisins if desired.

  • Make-Ahead Option: This salad can be made up to a day in advance and stored in the refrigerator. Give it a quick stir before serving.
  • Customization: Feel free to swap raisins with dried cranberries or add chopped apples for extra sweetness.
  • Serving Suggestions: This carrot salad pairs well with grilled meats, roasted chicken, or as part of a holiday spread. It’s also delicious on its own for a light, refreshing snack.
