Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the frozen green peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  5. Return the soup to the pot and stir in the heavy cream and chopped mint. Season with salt and pepper to taste. Heat gently over low heat until warmed through, about 5 minutes.
  6. Pour the soup into shot glasses or small cups. Garnish with additional mint leaves and serve with lemon wedges on the side.
