- 1 1/2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup buttermilk
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon vinegar
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of sugar and continue to beat until creamy. Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing well after each addition. Then, add the sour cream, buttermilk, cocoa powder, red food coloring, vinegar, and salt. Mix until fully combined and smooth.
- Pour the cheesecake batter over the prepared crust in the springform pan. Tap the pan gently on the counter to release any air bubbles.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, you can top the cheesecake with whipped cream and festive red and green sprinkles.
Notes
- For a lighter version, substitute cream cheese with low-fat cream cheese and use Greek yogurt instead of sour cream.
- For a chocolate twist, add chocolate chips to the batter before baking.
