Description

A delicious and healthy recipe for smoked salmon stuffed avocado boats, perfect for a light meal or appetizer.

Ingredients

Scale
  • 2 ripe avocados
  • 4 ounces smoked salmon, chopped
  • 1/4 cup cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon capers, drained
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Cut the avocados in half and remove the pits. Scoop out a little bit of the flesh to create a larger cavity for the filling.
  2. In a medium bowl, combine the chopped smoked salmon, cream cheese, lemon juice, capers, red onion, and dill. Mix well until all ingredients are evenly incorporated.
  3. Season the mixture with salt and pepper to taste.
  4. Spoon the smoked salmon mixture into the avocado halves, filling them generously.
  5. Serve immediately with lemon wedges on the side.

Notes

  • For a spicy kick, add a few dashes of hot sauce or a sprinkle of red pepper flakes to the filling.
  • Substitute the smoked salmon with cooked shrimp or crab for a different seafood flavor.
