  • 1/2 cup granulated sugar
  • 2 large eggs

  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1/4 cup gochujang (Korean chili paste)
  • 1 cup caramel bits or chopped caramel candies
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract and gochujang, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the caramel bits and chocolate chips, if using.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a spicier kick, increase the amount of gochujang to 1/3 cup.
  • Substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor and added nutrition.
