  • 1 tablespoon extra virgin olive oil
  • 1 cup rich beef broth
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine the ground coffee, dark brown sugar, smoked paprika, garlic powder, onion powder, sea salt, black pepper, and cayenne pepper (if desired) to create a flavorful rub.
  3. Generously coat the beef roast with the spice blend, ensuring every surface is well covered.
  4. In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Sear the roast for about 3-4 minutes on each side until a rich brown crust forms.
  5. Once seared, place the skillet with the roast into the preheated oven and cook for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for a perfect medium-rare finish.
  6. After roasting, take the beef out of the oven and allow it to rest for 15 minutes before carving.
  7. While the roast rests, prepare the chocolate sauce. In the same skillet used for searing, pour in the beef broth, cocoa powder, and soy sauce. Bring the mixture to a gentle simmer over medium heat, making sure to scrape up any flavorful bits stuck to the pan.
  8. Incorporate the cornstarch slurry into the sauce, stirring continuously until it thickens, which should take about 2-3 minutes.
  9. Slice the rested roast and serve it drizzled with the luscious chocolate sauce.
