- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine the ground coffee, dark brown sugar, smoked paprika, garlic powder, onion powder, sea salt, black pepper, and cayenne pepper (if desired) to create a flavorful rub.
- Generously coat the beef roast with the spice blend, ensuring every surface is well covered.
- In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Sear the roast for about 3-4 minutes on each side until a rich brown crust forms.
- Once seared, place the skillet with the roast into the preheated oven and cook for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for a perfect medium-rare finish.
- After roasting, take the beef out of the oven and allow it to rest for 15 minutes before carving.
- While the roast rests, prepare the chocolate sauce. In the same skillet used for searing, pour in the beef broth, cocoa powder, and soy sauce. Bring the mixture to a gentle simmer over medium heat, making sure to scrape up any flavorful bits stuck to the pan.
- Incorporate the cornstarch slurry into the sauce, stirring continuously until it thickens, which should take about 2-3 minutes.
- Slice the rested roast and serve it drizzled with the luscious chocolate sauce.
