  • 1/4 teaspoon baking powder
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Place shredded zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture.
  2. After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.
  3. In a large bowl, mix the zucchini, onion, flour, Parmesan cheese, eggs, black pepper, garlic powder, and baking powder until well combined.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
