- 2 cups shredded zucchini
- 1 teaspoon salt
- 1/4 cup chopped onion
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon baking powder
- 1/4 cup vegetable oil (for frying)
Instructions
- Place shredded zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture.
- After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.
- In a large bowl, mix the zucchini, onion, flour, Parmesan cheese, eggs, black pepper, garlic powder, and baking powder until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
- Serve warm with your choice of dipping sauce.
Notes
- For extra flavor, add fresh herbs like dill or parsley to the batter.
- These fritters can be made ahead of time and reheated in the oven.
