- 1 pound ground beef
- 1 packet taco seasoning
- 16- ounce box pasta
- 1 cup salsa
- 1 can diced tomatoes
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 onion diced
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 2 cups chicken broth
Cook pasta until al dente, drain, and set aside.
Cook onion and garlic in olive oil. Add ground beef and brown.
Stir in taco seasoning, salsa, and diced tomatoes. Add chicken broth and simmer.
Combine pasta with beef mixture. Stir in sour cream and cheeses until creamy.
