Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 16- ounce box pasta
  • 1 cup salsa
  • 1 can diced tomatoes
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 cups chicken broth

Instructions
 

  • Cook pasta until al dente, drain, and set aside.
  • Cook onion and garlic in olive oil. Add ground beef and brown.
  • Stir in taco seasoning, salsa, and diced tomatoes. Add chicken broth and simmer.
  • Combine pasta with beef mixture. Stir in sour cream and cheeses until creamy.

Notes

  • For a spicier dish, use pepper jack cheese and add hot sauce.
  • Swap the beef for black beans or vegetarian crumbles for a vegetarian version.
