Ingredients
  

  • 1 can 28 oz crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 package 9 oz cheese tortellini
  • ½ cup fresh basil chopped

Instructions
 

  • Combine Ingredients: Add tomatoes, broth, onion, garlic, Italian seasoning, salt, and pepper to slow cooker.
  • Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Blend: Purée the soup with an immersion blender until smooth.
  • Add Cream and Tortellini: Stir in heavy cream and tortellini, cook on high for 20-30 minutes.
  • Finish with Basil: Add fresh basil before serving.

Notes

Add more broth if a thinner consistency is desired.
