Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 lb gnocchi store-bought or homemade
  • 4 tbsp butter divided
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken or vegetable broth
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1/4 tsp white pepper
  • Salt to taste
  • 1/4 cup fresh parsley chopped
  • Optional: Parmesan cheese for garnish

Instructions
 

  • Prepare the Shrimp: If using frozen shrimp, thaw them by placing them in a colander under cold running water. Pat the shrimp dry with a paper towel and season both sides with salt and pepper.
  • Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions, typically 2-3 minutes or until the gnocchi float to the surface. Drain and set aside.
  • Sauté the Shrimp: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the shrimp in a single layer and cook for 2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • Sauté the Garlic: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for 1-2 minutes, stirring constantly, until fragrant but not browned.
  • Add Lemon and Broth: Pour in the lemon juice, lemon zest, and chicken or vegetable broth. Stir to combine, then let the sauce simmer for 2-3 minutes, allowing the flavors to come together.
  • Combine with Gnocchi and Shrimp: Return the cooked gnocchi and shrimp to the skillet. Toss everything together to coat the gnocchi and shrimp in the sauce.
  • Season and Garnish: Season the dish with white pepper, additional salt if needed, and fresh parsley. Stir gently to combine all the ingredients.
  • Serve: Serve the Shrimp Scampi Gnocchi hot, garnished with more fresh parsley or a sprinkle of parmesan cheese if desired.

Notes

For added flavor, you can toss in a handful of fresh spinach or halved cherry tomatoes when sautéing the garlic. This adds color and nutrition to the dish without overwhelming the flavors.
