Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour or almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup pumpkin puree
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, combine oats, flour, baking powder, cinnamon, and nutmeg.
  • In another bowl, mix pumpkin puree, coconut oil, maple syrup, and vanilla extract.
  • Combine wet and dry ingredients, then fold in chocolate chips.
  • Drop spoonfuls of dough onto the baking sheet and flatten slightly.
  • Bake for 12-15 minutes, until golden.

Notes

  • Add nuts or dried fruit for extra flavor.
  • Make them vegan by using dairy-free chocolate chips and maple syrup.
