Ingredients
  

  • 4-5 medium potatoes thinly sliced
  • 1/2 pound chorizo cooked and crumbled
  • 2 large tomatoes sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup shredded cheese cheddar, mozzarella, or a mix
  • Salt pepper, and nutmeg to taste
  • Optional: Fresh parsley or thyme for garnish

Instructions
 

  • Prepare Potatoes: Slice potatoes and set aside.
  • Cook Chorizo: Brown chorizo in a skillet and set aside.
  • Make Béchamel Sauce: Melt butter, whisk in flour, and add milk to make a creamy sauce. Season with salt, pepper, and nutmeg.
  • Layer Gratin: Layer potatoes, chorizo, and tomatoes in a baking dish, pouring béchamel sauce over each layer.
  • Top with Cheese: Finish with a layer of shredded cheese.
  • Bake: Cover with foil and bake at 375°F for 45 minutes. Remove foil and bake until golden and bubbly.

You can add extra vegetables like spinach or mushrooms for added flavor and nutrition.
