Ingredients
  

  • 4-5 medium potatoes Yukon Gold or russet, peeled and thinly sliced
  • 2 cups shredded pepper jack cheese
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: Chopped parsley or chives for garnish

Instructions
 

  • Preheat Oven: Preheat to 375°F and grease a 9x13-inch baking dish.
  • Prepare Potatoes: Peel and thinly slice the potatoes.
  • Make Cream Sauce: Sauté onion and garlic in butter, then stir in heavy cream and smoked paprika.
  • Layer the Potatoes and Cheese: Layer half the potatoes, pour half the cream, and sprinkle with cheese. Repeat the layers.
  • Bake: Cover with foil and bake for 45 minutes, then uncover and bake for 15-20 minutes until golden and bubbly.
  • Serve: Let cool for 10 minutes before serving. Garnish with parsley or chives.

Notes

You can add cooked bacon or ham for a meatier version, or swap pepper jack for a milder cheese if desired.
