Ingredients
  

  • 2 1/2 cups shredded coconut divided
  • 1 can sweetened condensed milk 14 oz
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: melted chocolate for dipping

Instructions
 

  • Mix 2 cups of shredded coconut, sweetened condensed milk, vanilla extract, and salt in a bowl. Chill for 10-15 minutes.
  • Roll the mixture into 1-inch balls, then coat in the remaining shredded coconut or dip in melted chocolate.
  • Chill the coconut balls in the fridge for at least 30 minutes before serving.

Notes

  • For extra flavor, try adding a few drops of coconut extract or lemon zest to the filling.
  • These coconut balls can be made up to a week ahead and stored in the fridge or freezer.
