Ingredients

  • 1 lb ground beef 85% lean
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 4 cups beef broth
  • 2 cups elbow macaroni
  • 1 can 15 oz diced tomatoes
  • 1 teaspoon Italian seasoning optional
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • Salt and black pepper to taste

Instructions

Sauté the Beef and Aromatics:

  • Set the Instant Pot to "Sauté" mode and heat the olive oil.
  • Add the ground beef and cook until browned, breaking it up with a spatula.
  • Stir in the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent.

Add Remaining Ingredients:

  • Pour in the beef broth, scraping the bottom of the pot to release any browned bits.
  • Stir in the elbow macaroni, diced tomatoes, Italian seasoning (if using), salt, and black pepper. Ensure the pasta is fully submerged.

Pressure Cook:

  • Secure the lid on the Instant Pot and set the valve to "Sealing."
  • Select "Pressure Cook" or "Manual" on High Pressure for 4 minutes.
  • Once cooking is complete, perform a quick release by carefully turning the valve to "Venting."

Incorporate Cheese and Milk:

  • Open the lid and stir in the shredded cheddar cheese and milk until melted and creamy.
  • Adjust seasoning with additional salt and black pepper if needed.

Serve:

  • Ladle the Hamburger Mac into bowls and serve hot.

Notes

  • Variations: For added vegetables, stir in frozen peas or corn after pressure cooking and let them heat through.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk to maintain creaminess.
  • Cheese Selection: Sharp cheddar cheese provides a richer flavor, but feel free to use your preferred cheese blend.
