For the Skewers:
- 1 1/2 lbs skinless salmon fillets cut into 1-inch cubes
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves minced
- 2 tbsp fresh dill chopped
- Salt and pepper to taste
For the Creamy Dill Yogurt Sauce:
- 1 cup plain Greek yogurt
- 2 tbsp fresh dill chopped
- 1/2 cup grated cucumber excess liquid squeezed out
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Marinate the salmon in olive oil, lemon juice, garlic, and dill for 15-30 minutes.
Make the yogurt sauce by mixing yogurt, dill, cucumber, lemon juice, honey, salt, and pepper.
Thread the salmon onto skewers and grill for 2-3 minutes per side.
Serve the skewers with the creamy dill yogurt sauce on the side.
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- The yogurt sauce can be made ahead and stored in the fridge for up to 2 days.
