Ingredients
  

For the Skewers:

  • 1 1/2 lbs skinless salmon fillets cut into 1-inch cubes
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves minced
  • 2 tbsp fresh dill chopped
  • Salt and pepper to taste

For the Creamy Dill Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tbsp fresh dill chopped
  • 1/2 cup grated cucumber excess liquid squeezed out
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions
 

  • Marinate the salmon in olive oil, lemon juice, garlic, and dill for 15-30 minutes.
  • Make the yogurt sauce by mixing yogurt, dill, cucumber, lemon juice, honey, salt, and pepper.
  • Thread the salmon onto skewers and grill for 2-3 minutes per side.
  • Serve the skewers with the creamy dill yogurt sauce on the side.

Notes

  • If using wooden skewers, soak them in water for 30 minutes before grilling.
  • The yogurt sauce can be made ahead and stored in the fridge for up to 2 days.
