- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
In a large bowl, whisk together flour, baking powder, salt, and sugar. In a separate bowl, beat eggs, then add milk and vanilla. Pour wet ingredients into dry ingredients, whisking until smooth.
Heat oil in a heavy-bottomed pot to 350°F (175°C). Drop spoonfuls of batter into the hot oil, frying in batches until golden brown, about 2-3 minutes per batch.
Transfer fried bites to a paper towel-lined plate to drain. Dust with powdered sugar and serve warm.
- For a fun variation, toss the bites in cinnamon sugar instead of powdered sugar.
- Serve with chocolate, caramel, or fruit dipping sauces for extra indulgence.
