  • 1 large eggplant sliced into ½-inch rounds
  • Salt for drawing moisture
  • Olive oil for brushing
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese

  • Fresh basil or parsley for garnish

Instructions
 

  • Prepare Eggplant: Slice eggplant and salt each slice. Let sit 10 minutes, then pat dry.
