- 2 large cucumbers thinly sliced
- 2-3 large tomatoes cut into wedges
- 1 small red onion thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar or apple cider vinegar
- 2 tbsp fresh parsley or basil chopped
- Salt and pepper to taste
Slice the cucumbers, tomatoes, and onion, and combine in a large bowl.
Whisk together the olive oil, vinegar, salt, and pepper to make the dressing.
Pour the dressing over the vegetables and toss to coat.
Stir in fresh parsley or basil, and refrigerate for at least 30 minutes before serving.
