Ingredients
  

For the Pepper Steak:

  • 1 1/2 lbs beef strips
  • 2 bell peppers sliced
  • 1 onion sliced
  • 3 garlic cloves minced

For the Sauce:

  • 1/3 cup soy sauce
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes optional

For Thickening (Optional):

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

  • Place the beef strips, bell peppers, onion, and garlic into the crockpot.
  • Whisk together soy sauce, beef broth, Worcestershire sauce, brown sugar, and spices. Pour over the beef and vegetables.
  • Cook on low for 6-7 hours or high for 3-4 hours.
  • If desired, thicken the sauce with a cornstarch slurry before serving.

Notes

  • This dish is great served over rice or noodles, but for a low-carb option, try serving over cauliflower rice.
  • To make it gluten-free, use tamari instead of soy sauce.
