Ingredients
  

  • 4 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 2 medium carrots shredded
  • 1 red bell pepper thinly sliced
  • 1/2 red onion diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn canned or frozen, thawed
  • 1/4 cup fresh cilantro chopped

Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Shred the cabbage and carrots, and slice the bell pepper and red onion. Drain black beans and corn.
  • In a small bowl, whisk together mayonnaise, sour cream, lime juice, cumin, chili powder, garlic powder, salt, and pepper.
  • In a large bowl, toss together the cabbage, carrots, bell pepper, red onion, black beans, corn, and cilantro.
  • Pour the dressing over the vegetables and toss to combine. Chill for 30 minutes before serving.

Notes

  • Adjust spice levels to taste by adding more chili powder or hot sauce.
  • Make ahead for the best flavor.
