- 4 cups green cabbage shredded
- 2 cups red cabbage shredded
- 2 medium carrots shredded
- 1 red bell pepper thinly sliced
- 1/2 red onion diced
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn canned or frozen, thawed
- 1/4 cup fresh cilantro chopped
Dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Shred the cabbage and carrots, and slice the bell pepper and red onion. Drain black beans and corn.
In a small bowl, whisk together mayonnaise, sour cream, lime juice, cumin, chili powder, garlic powder, salt, and pepper.
In a large bowl, toss together the cabbage, carrots, bell pepper, red onion, black beans, corn, and cilantro.
Pour the dressing over the vegetables and toss to combine. Chill for 30 minutes before serving.
