For the Filling:
- 6-7 large peaches peeled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
For the Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter cold and cubed
- 1/4 cup boiling water
Preheat oven to 375°F. Grease a baking dish.
Toss peaches with sugar, lemon juice, and cinnamon.
Make the topping by mixing flour, sugar, baking powder, and salt. Cut in the butter and add boiling water.
Pour peaches into the baking dish and top with spoonfuls of the dough.
