- 2 cups broccoli florets finely chopped
- 2 cups cauliflower florets finely chopped
- 2 large carrots shredded
- 1/2 small red onion thinly sliced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Finely chop the broccoli and cauliflower florets, and shred the carrots. Place in a large mixing bowl with the sliced red onion.
Whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper.
Pour the dressing over the vegetables and toss until evenly coated.
