Ingredients
  

  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 cup diced onions
  • 1/2 cup sliced carrots
  • 1/2 cup diced celery
  • 1/2 cup frozen peas
  • 2 cups cooked shredded chicken
  • 1 3/4 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 pie crusts homemade or store-bought

Instructions
 

  • Preheat oven to 425°F.
  • Sauté onions, carrots, and celery in butter. Add flour and cook to form a roux.
  • Gradually whisk in chicken broth and milk. Cook until thickened.
  • Stir in chicken, peas, thyme, garlic powder, salt, and pepper.
  • Pour filling into pie crust, top with second crust, and crimp edges.
  • Bake for 30-35 minutes until golden brown.

Notes

  • Make ahead and refrigerate before baking for easy prep.
  • Cover edges with foil if they brown too quickly.
