Ingredients
  

  • 1 ½ cups old-fashioned oats
  • 1 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ½ cup brown sugar packed
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup diced apple Granny Smith or Honeycrisp
  • Optional: ½ cup raisins or chopped nuts

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  • Prepare the Apples: Peel, core, and dice the apples into small chunks. Set aside.
  • Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Cream the Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • Fold in Oats and Apples: Gently fold in the oats and diced apples (and any optional add-ins like raisins or nuts).
  • Scoop and Shape: Scoop rounded balls of dough onto the prepared baking sheet, leaving 2 inches between each cookie.
  • Bake the Cookies: Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
  • Cool and Serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewy cookies, be sure not to overmix the dough. Chilling the dough before baking can help the cookies hold their shape better during baking.
