Ingredients

  • 2 pounds wild boar shoulder
  • 4 cups lard
  • 10 cloves garlic, crushed
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh rosemary
  • 1 tablespoon black peppercorns
  • 1 tablespoon salt
  • 1 cup white wine

Instructions

  1. Preheat your oven to 200°F (90°C).
  2. In a large Dutch oven, melt the lard over low heat.
  3. Season the wild boar shoulder with salt and pepper and add it to the pot.
  4. Add crushed garlic, thyme, rosemary, and black peppercorns.
  5. Pour in the white wine and bring to a simmer.
  6. Cover the pot and place it in the oven.
  7. Cook for 6 to 8 hours, or until the meat is very tender.
  8. Remove the pot from the oven and let it cool.
  9. Once cooled, store the meat submerged in the lard.
