- 2 pounds wild boar shoulder
- 4 cups lard
- 10 cloves garlic, crushed
- 2 tablespoons fresh thyme
- 2 tablespoons fresh rosemary
- 1 tablespoon black peppercorns
- 1 tablespoon salt
- 1 cup white wine
Instructions
- Preheat your oven to 200°F (90°C).
- In a large Dutch oven, melt the lard over low heat.
- Season the wild boar shoulder with salt and pepper and add it to the pot.
- Add crushed garlic, thyme, rosemary, and black peppercorns.
- Pour in the white wine and bring to a simmer.
- Cover the pot and place it in the oven.
- Cook for 6 to 8 hours, or until the meat is very tender.
- Remove the pot from the oven and let it cool.
- Once cooled, store the meat submerged in the lard.

- Serve with crusty bread to soak up the rich flavors.
- This dish can be stored in the refrigerator for up to a month.
