  • 2 cups animal fat (such as lard or duck fat)
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean the fish and pat it dry.
  3. Season the fish with salt and pepper, inside and out.
  4. Stuff the fish with lemon slices and herbs.
