- 1 whole fish (such as trout or snapper)
- 2 cups animal fat (such as lard or duck fat)
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 lemon, sliced

Instructions
- Preheat the oven to 400°F (200°C).
- Clean the fish and pat it dry.
- Season the fish with salt and pepper, inside and out.
- Stuff the fish with lemon slices and herbs.
- Melt the animal fat in a large oven-safe pan over medium heat.
- Once melted, carefully place the fish in the pan and cover it with more melted fat.
- Roast in the preheated oven for about 25-30 minutes, or until the fish is cooked through and the skin is crispy.
- Remove from the oven and let it rest before serving.
