- 2 cups animal fat (such as lard or duck fat)
- 1 tablespoon salt
- 2 lemons (sliced)
- 1 bunch fresh herbs (such as dill or parsley)
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the fish with salt and stuff the cavity with lemon slices and fresh herbs.
- Melt the animal fat in a pan and coat the fish thoroughly.
- Place the fish in a roasting pan and pour any remaining fat over it.
- Roast in the oven for 30-40 minutes, until the fish is cooked through.
- Let the fish rest for a few minutes before serving.
