- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 ounces white chocolate, melted
- 1 cup fresh raspberries
- 1/2 cup pistachios, shelled and chopped
- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 24 ladyfinger cookies
- Additional raspberries and pistachios for garnish
Instructions
- In a large mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
- Gently fold in the melted white chocolate until fully incorporated.
- In a shallow dish, mix the cooled espresso with the coffee liqueur, if using.
- Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
- In a 9×9 inch dish, layer half of the soaked ladyfingers on the bottom.
- Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the raspberries and half of the chopped pistachios on top.
- Repeat the layering process with the remaining ladyfingers, mascarpone mixture, raspberries, and pistachios.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, garnish with additional raspberries and chopped pistachios.
Notes
- For a fruity twist, substitute the raspberries with strawberries or blueberries.
- Add a layer of lemon curd between the mascarpone and ladyfingers for a zesty flavor.
