Description

A delightful dessert combining the rich flavors of white chocolate, fresh raspberries, and crunchy pistachios in a classic tiramisu.


Ingredients

  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ounces white chocolate, melted
  • 1 cup fresh raspberries
  • 1/2 cup pistachios, shelled and chopped
  • 1 cup brewed espresso or strong coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Additional raspberries and pistachios for garnish

Instructions

  1. In a large mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
  2. Gently fold in the melted white chocolate until fully incorporated.
  3. In a shallow dish, mix the cooled espresso with the coffee liqueur, if using.
  4. Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy.
  5. In a 9×9 inch dish, layer half of the soaked ladyfingers on the bottom.
  6. Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the raspberries and half of the chopped pistachios on top.
  7. Repeat the layering process with the remaining ladyfingers, mascarpone mixture, raspberries, and pistachios.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, garnish with additional raspberries and chopped pistachios.

Notes

  • For a fruity twist, substitute the raspberries with strawberries or blueberries.
  • Add a layer of lemon curd between the mascarpone and ladyfingers for a zesty flavor.
