Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 1 cup granulated sugar
- 6 large egg yolks
- 1 tablespoon pine extract
- 1/4 teaspoon salt
- 1/4 cup sugar (for topping)
Instructions
- Preheat the oven to 325°F (163°C).
- In a saucepan, combine the heavy cream, whole milk, and 1 cup of sugar. Heat until sugar dissolves.
- In a bowl, whisk together the egg yolks, pine extract, and salt.
- Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly.
- Strain the mixture through a fine mesh sieve into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set but slightly jiggly in the center.
- Remove from water bath and cool to room temperature, then refrigerate for at least 4 hours.
- Before serving, sprinkle sugar on top of each custard and caramelize with a kitchen torch.
Notes
- For a more intense pine flavor, let the cream mixture steep with pine needles for 30 minutes before straining.
- Be careful not to burn the sugar when caramelizing.
