Whispering Pine Crème Brûlée

A rich and creamy dessert with a hint of pine flavor, perfect for special occasions.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 6 large egg yolks
  • 1 tablespoon pine extract
  • 1/4 teaspoon salt
  • 1/4 cup sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, combine the heavy cream, whole milk, and 1 cup of sugar. Heat until sugar dissolves.
  3. In a bowl, whisk together the egg yolks, pine extract, and salt.
  4. Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly.
  5. Strain the mixture through a fine mesh sieve into ramekins.
  6. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  7. Bake for 30-35 minutes until set but slightly jiggly in the center.
  8. Remove from water bath and cool to room temperature, then refrigerate for at least 4 hours.
  9. Before serving, sprinkle sugar on top of each custard and caramelize with a kitchen torch.

Notes

  • For a more intense pine flavor, let the cream mixture steep with pine needles for 30 minutes before straining.
  • Be careful not to burn the sugar when caramelizing.
