Instructions
- In a large pot, bring water to a boil. Add the diced sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a mixing bowl, combine the cooked sweet potatoes, heavy cream, maple syrup, vanilla extract, cinnamon, and salt.
- Using an electric mixer or a hand whisk, whip the mixture until smooth and creamy, about 2-3 minutes.
- Taste and adjust sweetness if desired by adding more maple syrup.
- Transfer the whipped sweet potato cream to a serving bowl and chill in the refrigerator for at least 30 minutes before serving.
