Instructions
- In a blender, combine the frozen watermelon, frozen banana, Greek yogurt, coconut milk, honey (if using), and vanilla extract. Blend until smooth and creamy.
- If the mixture is too thick, add a little more coconut milk to reach your desired consistency.
- Pour the smoothie into a bowl.
- Top with fresh fruit, a sprinkle of granola, and mint leaves for garnish, if desired.
