Ingredients

- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced parsnips
- 1 cup diced turnips
- 1 medium onion, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent.
- Add the diced potatoes, carrots, parsnips, and turnips. Stir and cook for about 5 minutes.
- Pour in the vegetable broth, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat, cover, and simmer for 20-25 minutes until the vegetables are tender.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Adjust seasonings to taste and serve hot.
