Ingredients

  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced parsnips
  • 1 cup diced turnips
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent.
  2. Add the diced potatoes, carrots, parsnips, and turnips. Stir and cook for about 5 minutes.
  3. Pour in the vegetable broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce the heat, cover, and simmer for 20-25 minutes until the vegetables are tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes.
  6. Adjust seasonings to taste and serve hot.
