Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add the velvet ash leaves and vegetable broth. Bring to a boil, then reduce heat to simmer for 15 minutes.
  3. Puree the soup using an immersion blender.
  4. Stir in the heavy cream, and season with salt and black pepper.
