Instructions
- Begin by placing the rolled oats and cashew butter in a mixing bowl, then drizzle in the agave syrup. Mix thoroughly until the ingredients are well combined.
- Incorporate the plant-based protein powder, spirulina powder, flaxseeds, cocoa nibs, almond extract, and pink Himalayan salt into the mixture. Stir until everything is evenly distributed.
- If the mixture feels overly wet, gradually add more rolled oats or protein powder until it achieves a workable texture.
- With your hands, roll the mixture into bite-sized balls, approximately 1 inch in diameter, and arrange them on a baking sheet lined with parchment paper.
- Chill the bites in the refrigerator for a minimum of 30 minutes to allow them to set properly.
- Keep the energy bites stored in an airtight container in the fridge, where they will stay fresh for up to a week.
