  • 1 cup medjool dates, pitted
  • ¼ cup unsweetened cocoa powder
  • ¼ cup agave syrup
  • ½ cup creamy almond butter
  • 1 teaspoon pure vanilla extract
  • 1 cup chilled coconut milk
  • ¼ cup coconut sugar
  • ½ cup crushed almonds
  • Pinch of sea salt

Instructions

  1. Start by blending the almond meal, medjool dates, cocoa powder, and a pinch of sea salt in a food processor until the mixture forms a cohesive, sticky dough.
  2. Firmly press this mixture into the base of a 9-inch tart pan, ensuring an even layer. Place the tart crust in the freezer for about 15 minutes to firm up.
  3. In a separate bowl, mix together the almond butter, agave syrup, and vanilla extract until the mixture is smooth and creamy.
  4. Once the crust has set, pour the almond butter mixture over the crust, spreading it out evenly. Return the tart to the freezer for another 15 minutes to allow it to firm up.
  5. In a mixing bowl, whip the chilled coconut milk until it becomes light and fluffy. Gradually add the coconut sugar while continuing to whip until fully incorporated.
  6. Carefully layer the whipped coconut mixture over the almond butter layer in the tart, smoothing it out gently.
  7. Top the tart with crushed almonds and, if desired, a drizzle of agave syrup for added sweetness.
  8. Allow the tart to chill in the refrigerator for at least 2 hours to set properly before slicing and serving.
