- 1 cup silken tofu, well-drained
- 1/2 cup whipped coconut cream
- 1/4 cup confectioners’ sugar
- 1 teaspoon vanilla almond extract
- 1 package (7 oz) plant-based sponge cookies
- Cocoa powder for topping
- Fresh orange wedges for decoration (optional)
Instructions
- Whisk together the cooled espresso, orange juice, grated orange peel, agave syrup, and vanilla extract in a shallow bowl. Set aside.
- In a blender, combine the silken tofu, whipped coconut cream, confectioners’ sugar, and vanilla almond extract. Blend until silky and smooth.
- Briefly immerse each plant-based sponge cookie in the espresso-orange blend, ensuring they absorb the flavors without becoming soggy.
- Layer the soaked cookies in the bottom of a square baking dish.
- Spread half of the creamy tofu mixture over the cookies, smoothing it out evenly.
- Repeat the layering process with another set of soaked cookies followed by the remaining creamy mixture.
- Cover the dish with a lid or plastic wrap and chill in the refrigerator for a minimum of 4 hours, or ideally overnight.
- When ready to serve, dust the top with cocoa powder and adorn with fresh orange wedges if desired.

- For an indulgent chocolate flavor, mix in a tablespoon of cocoa powder into the creamy tofu blend.
- Swap the orange juice for lemon juice for a zesty twist, adjusting the zest to match.
