- 1 ½ cups ground almonds
- 1/4 cup unsweetened cocoa powder
- 1/4 cup melted coconut butter
- 2 tablespoons agave nectar
- 1/4 teaspoon sea salt
- 1 cup creamy coconut milk
- 1 cup vegan chocolate morsels
- 1 teaspoon pure peppermint oil
- 1 tablespoon maple syrup (optional, for added sweetness)
- Sprigs of fresh mint, for decoration
Instructions
- Preheat your oven to 350°F.
- In a large bowl, mix together the ground almonds, cocoa powder, melted coconut butter, agave nectar, and sea salt until a cohesive dough forms.
- Firmly press this mixture into the base and up the sides of a tart pan, ensuring an even layer.
- Bake for 10 minutes, then take it out and allow it to cool completely.
- In a medium saucepan over medium heat, combine the creamy coconut milk and vegan chocolate morsels. Stir continuously until the chocolate is fully melted and the mixture is silky smooth.
- Remove from heat and incorporate the peppermint oil and maple syrup if you desire a sweeter taste.
- Once the crust has cooled, pour the luscious chocolate mixture into it, spreading it evenly across the surface.
- Place the tart in the refrigerator for a minimum of 2 hours to allow it to set properly.
- After it has firmed up, decorate the top with fresh mint sprigs before slicing into pieces and serving.
Notes
- For an extra layer of flavor, consider blending in a mix of dark and semi-sweet chocolate morsels.
- You might also want to sprinkle some crushed nuts or fresh berries atop the chocolate filling for an added crunch and burst of flavor.
