A delicious plant-based dessert that combines the flavors of coconut, raspberry, and dark chocolate in a tart form.

- 1 ½ cups all-purpose flour
- 1 cup unsweetened shredded coconut
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup almond milk (or any plant-based milk)
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup raspberry jam (or any fruit jam)
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil (for melting chocolate)
- Extra shredded coconut for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom or line it with parchment paper.
- In a large mixing bowl, combine the flour, shredded coconut, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, mix the almond milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared tart pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the tart cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, spread the raspberry jam evenly over the top of the tart.
- In a small saucepan, melt the dark chocolate chips and coconut oil over low heat, stirring until smooth. Pour the melted chocolate over the jam layer, spreading it evenly.
- Sprinkle extra shredded coconut on top of the chocolate layer. Allow the tart to set at room temperature for about 30 minutes or refrigerate for quicker setting.
- Cut into slices and serve.
Notes
- For a richer flavor, add a teaspoon of espresso powder to the batter.
- You can substitute the raspberry jam with other fruit jams like strawberry or apricot for a different taste.
