Description

A delicious plant-based dessert that combines the flavors of coconut, raspberry, and dark chocolate in a tart form.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup unsweetened shredded coconut
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup almond milk (or any plant-based milk)
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup raspberry jam (or any fruit jam)
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil (for melting chocolate)
  • Extra shredded coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with removable bottom or line it with parchment paper.
  2. In a large mixing bowl, combine the flour, shredded coconut, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In another bowl, mix the almond milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Pour the batter into the prepared tart pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the tart cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  5. Once cooled, spread the raspberry jam evenly over the top of the tart.
  6. In a small saucepan, melt the dark chocolate chips and coconut oil over low heat, stirring until smooth. Pour the melted chocolate over the jam layer, spreading it evenly.
  7. Sprinkle extra shredded coconut on top of the chocolate layer. Allow the tart to set at room temperature for about 30 minutes or refrigerate for quicker setting.
  8. Cut into slices and serve.

Notes

  • For a richer flavor, add a teaspoon of espresso powder to the batter.
  • You can substitute the raspberry jam with other fruit jams like strawberry or apricot for a different taste.
