Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (or vegetable oil)
  • Sea salt, for sprinkling

Instructions

  1. In a medium saucepan, combine the cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the cranberries begin to burst, about 10 minutes.
  2. Remove from heat and stir in the vanilla extract. Let the cranberry mixture cool to room temperature, then refrigerate for at least 2 hours or until fully chilled and thickened.
  3. Once the cranberry sauce is chilled, line a baking sheet with parchment paper. Using a spoon, drop spoonfuls of the cranberry sauce onto the prepared baking sheet, creating small mounds. Place in the freezer for about 30 minutes to firm up.
  4. While the cranberry sauce mounds are freezing, melt the chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and fully melted.
  5. Remove the cranberry mounds from the freezer. Dip each mound into the melted chocolate, ensuring it is fully coated. Return the chocolate-covered cranberries to the parchment-lined baking sheet.
  6. Once all the mounds are coated, sprinkle a pinch of sea salt on top of each one. Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to set.
  7. Serve chilled or at room temperature. Enjoy as a festive treat or a unique dessert!
