- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (or vegetable oil)

Instructions
- In a medium saucepan, combine the cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the cranberries begin to burst, about 10 minutes.
- Remove from heat and stir in the vanilla extract. Let the cranberry mixture cool to room temperature, then refrigerate for at least 2 hours or until fully chilled and thickened.
- Once the cranberry sauce is chilled, line a baking sheet with parchment paper. Using a spoon, drop spoonfuls of the cranberry sauce onto the prepared baking sheet, creating small mounds. Place in the freezer for about 30 minutes to firm up.
- While the cranberry sauce mounds are freezing, melt the chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and fully melted.
- Remove the cranberry mounds from the freezer. Dip each mound into the melted chocolate, ensuring it is fully coated. Return the chocolate-covered cranberries to the parchment-lined baking sheet.
- Once all the mounds are coated, sprinkle a pinch of sea salt on top of each one. Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to set.
- Serve chilled or at room temperature. Enjoy as a festive treat or a unique dessert!
