- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup ube halaya (ube jam)
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until well mixed.
- In a large mixing bowl, beat the softened butter with the granulated and brown sugars until light and airy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until smoothly blended.
- Incorporate the ube halaya and stir until evenly distributed.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fold in the white chocolate chips until well dispersed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, until the edges are light golden brown and the centers are slightly soft.
- Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Enhance the flavor by mixing in 1/2 cup of chopped macadamia nuts or walnuts.
- For a more pronounced ube taste, increase the ube halaya to 3/4 cup and decrease the flour by 1/4 cup.
