Delicious Ube Cookies with creamy white chocolate chips, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ube halaya (ube jam)
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt until well mixed.
  3. In a large mixing bowl, beat the softened butter with the granulated and brown sugars until light and airy, about 2-3 minutes.
  4. Add the egg and vanilla extract, mixing until smoothly blended.
  5. Incorporate the ube halaya and stir until evenly distributed.
  6. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  7. Fold in the white chocolate chips until well dispersed.
  8. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  9. Bake for 10-12 minutes, until the edges are light golden brown and the centers are slightly soft.
  10. Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Enhance the flavor by mixing in 1/2 cup of chopped macadamia nuts or walnuts.
  • For a more pronounced ube taste, increase the ube halaya to 3/4 cup and decrease the flour by 1/4 cup.
