Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)
  • 1 tablespoon olive oil
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 teaspoon dried mint
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons butter

Instructions

  1. Mix the flour and salt in a spacious bowl and create a well in the center.
  2. Crack in the egg and pour in the olive oil.
  3. Gradually incorporate the flour into the wet ingredients, adding water little by little until a pliable dough forms.
  4. Knead the dough for approximately 5 minutes until smooth and elastic.
  5. Cover the bowl with a damp cloth and let it rest for 30 minutes.
  6. Prepare the yogurt sauce by combining yogurt, minced garlic, dried mint, paprika, black pepper, and 1/4 teaspoon salt in a separate bowl.
  7. Stir the yogurt mixture until homogenous and set aside.
  8. Roll out the rested dough on a floured surface to about 1/8 inch thick.
  9. Cut the rolled dough into small squares, each roughly 1 inch on each side.
  10. Place a small spoonful of filling in the center of each square and fold the corners over to create parcels, pinching the edges securely.
  11. Bring a large pot of salted water to a boil and gently add the dumplings in batches.
  12. Cook the dumplings for about 5-7 minutes or until they rise to the surface.
  13. Use a slotted spoon to remove them from the pot and let them drain.
  14. Melt butter in a skillet over medium heat and sauté the drained dumplings until they develop a light golden color.
  15. Arrange the dumplings on a serving platter and drizzle the creamy yogurt sauce over them. Optionally, sprinkle extra dried mint on top.
