A delightful recipe for Turkish tiny dumplings served with a creamy yogurt sauce.

- 2 cups all-purpose flour
- 1 large egg
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed)
- 1 tablespoon olive oil
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 1 teaspoon dried mint
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons butter
Instructions
- Mix the flour and salt in a spacious bowl and create a well in the center.
- Crack in the egg and pour in the olive oil.
- Gradually incorporate the flour into the wet ingredients, adding water little by little until a pliable dough forms.
- Knead the dough for approximately 5 minutes until smooth and elastic.
- Cover the bowl with a damp cloth and let it rest for 30 minutes.
- Prepare the yogurt sauce by combining yogurt, minced garlic, dried mint, paprika, black pepper, and 1/4 teaspoon salt in a separate bowl.
- Stir the yogurt mixture until homogenous and set aside.
- Roll out the rested dough on a floured surface to about 1/8 inch thick.
- Cut the rolled dough into small squares, each roughly 1 inch on each side.
- Place a small spoonful of filling in the center of each square and fold the corners over to create parcels, pinching the edges securely.
- Bring a large pot of salted water to a boil and gently add the dumplings in batches.
- Cook the dumplings for about 5-7 minutes or until they rise to the surface.
- Use a slotted spoon to remove them from the pot and let them drain.
- Melt butter in a skillet over medium heat and sauté the drained dumplings until they develop a light golden color.
- Arrange the dumplings on a serving platter and drizzle the creamy yogurt sauce over them. Optionally, sprinkle extra dried mint on top.

- Adjust the water in the dough as needed for consistency.
- Feel free to experiment with different fillings for the dumplings.
