Instructions
- In a small saucepan, melt the butter over medium heat. Once melted, add the paprika and red pepper flakes. Stir for about 1 minute until fragrant, then remove from heat and set aside.
- Bring a pot of water to a gentle simmer. Carefully crack the eggs into the simmering water and poach for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon and drain on a paper towel.
- In a bowl, mix the Greek yogurt with a pinch of salt until smooth.
- To serve, spread the yogurt mixture on a plate, place the poached eggs on top, and drizzle the spiced butter over the eggs.
- Garnish with fresh dill or parsley and serve with crusty bread on the side for dipping.
