Description

A delicious recipe for Turkish Eggs featuring poached eggs served over creamy Greek yogurt and drizzled with spiced butter.

Ingredients

Scale
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 2 tablespoons unsalted butter
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • Salt, to taste
  • Fresh dill or parsley, for garnish
  • Crusty bread, for serving

Instructions

  1. In a small saucepan, melt the butter over medium heat. Once melted, add the paprika and red pepper flakes. Stir for about 1 minute until fragrant, then remove from heat and set aside.
  2. Bring a pot of water to a gentle simmer. Carefully crack the eggs into the simmering water and poach for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon and drain on a paper towel.
  3. In a bowl, mix the Greek yogurt with a pinch of salt until smooth.
  4. To serve, spread the yogurt mixture on a plate, place the poached eggs on top, and drizzle the spiced butter over the eggs.
  5. Garnish with fresh dill or parsley and serve with crusty bread on the side for dipping.

Notes

  • For a creamier texture, add a splash of lemon juice to the yogurt before mixing.
  • Experiment with different spices in the butter, such as cumin or sumac, for a unique flavor twist.
